Banana and egg “pancakes”!
ingredients:
- two large eggs
- banana
Directions:
- cut the banana into a bowl
- crack the eggs on top of the sliced banana
- mash up the bananas and beat the eggs, you can use a spoon, I just found this easier
- on medium heat, coat the pan (you can use cooking spray as an alternative)
- spoon out a medium sized “pancake.” I used a ladle
- when slightly brown, flip the “pancake”
- tada! I didn’t even need syrup.
